1

Step 1

Preheat the oven to 180°C (350°F) on the bake setting.

2

Step 2

Sift all powders.

3

Step 3

Coarsely chop the dried red fruits using a knife or a coffee grinder.

4

Step 4

Beat the eggs and sugar with an electric mixer or stand mixer on medium-high speed for 5 minutes, until the mixture is pale and frothy.

Step 4
5

Step 5

While continuing to stir, add the oil, orange juice, and spreadable cheese.

Baker's Tip The mixture will become very liquid but don't worry, everything is normal!
6

Step 6

Add the dry ingredients in three batches. Reduce the mixer speed and continue mixing until the batter is smooth and all the flour has been incorporated.

Baker's Tip Scrape down the sides of the bowl regularly to make sure all the flour is incorporated.
7

Step 7

Toss the chopped red fruits with a tablespoon of flour, then fold them into the batter.

Step 7
Baker's Tip Gently fold the berries into the batter with a whisk, ensuring they are evenly distributed throughout. Coating the berries with flour helps prevent them from sinking to the bottom of the cake during baking.
8

Step 8

Grease and flour a loaf pan, then pour in the batter.

Step 8
Baker's Tip I used a 25×12 cm loaf pan, but you can use any similar-sized pan if you prefer.
9

Step 8

Place two thin strips of butter in the center of the batter, running parallel to the long side of the pan.

Step 8
Baker's Tip This step helps create a perfect crack down the center of the loaf! It’s purely for aesthetics, so if you prefer to skip it, the cake will still turn out delicious.
10

Step 9

Bake the loaf cake for about 40–50 minutes. It’s done when a wooden skewer inserted in the center comes out mostly clean. A slight moisture is normal.
