In the bowl of a stand mixer, combine the flour, water, and yeast.

Once the flour has fully absorbed the water, add the salt and continue kneading until you can no longer feel the granules between your fingers.

At this point, add the olive oil and continue working the dough until it is smooth and elastic.

Baker's Tip When adding the oil, the dough might look like it's falling apart—don't worry, that's normal! Keep kneading confidently; the dough will eventually absorb the oil and become perfectly smooth.

Once the dough has formed, cover the bowl with plastic wrap and let it rest until it has doubled in size.

Baker's Tip This can take between 1 to 2 hours, but it’s always best to mark your starting point and wait for a visible double in volume!

Step 5: Shaping

Once the dough has risen, weigh it and divide it into 4 equal balls.

Step 6: Stretching and Topping

Stretch each ball by hand into your desired shape, then top as you like. I’ve gone with the classics: just tomato and mozzarella.

Baker's Tip How you stretch the dough changes the result: leave it thicker for a tall, soft pizza similar to the Italian 'gnocco'. If you stretch it very thin (even using a rolling pin), you'll get a much crunchier finish.

Step 7: Second Rise

Preheat your oven to 180°C (350°F) in static mode. While the oven heats up, cover your pizzas with a clean kitchen towel and let them rise a second time.

Once the oven is ready, bake the pizzas for 25-30 minutes. They are done when the crust reaches a beautiful golden-brown color!
